Whole cluster pressed and 100% barrel fermented in French oak, 16% of which was new. Aged sur lie in barrel and stirred once a month. No malolactic fermentation for the Sauvignon Blanc and Sauvignon Musque; this year the Semillon went through partial Malolactic Fermentation.
Each lot was harvested between late August and early September during the cool early mornings

The Sauvignon Blanc and Sauvignon Musque are grown at the top of Atlas Peak, while the Semillon portion is old vines from the historic Tofanelli vineyard in Calistoga.
The 2021 vintage was one of the driest vintages in recent history, which tends to result in lower yields and often more concentrated flavors. This rang incredibly true for our Sauvignon Blanc and Sauvignon Musque, with yields down roughly 30%. But we were rewarded with intense flavors and aromatics, which you'll find as soon as you pull the cork!
Tofanelli is a historic dry farmed vineyard. We were fortunate that yields were not reduced as those vines are conditioned to grow with minimal water and still retain the pure flavors and textures we expect from this site.
Our Sauvignon Blanc is more akin to the tradtitional Bordeaux Blanc, a blend of Sauvignon Blanc, Sauvignon Musque and Semillon. Each component offers its unique contribution to the blend - pure fruit from the Sauvignon Blanc, beautiful florals from the Musque, along with rich texture and depth from the Semillon. The wine is barrel fermented in 100% French oak, aged sur lie for 6 months, and stirred monthly to build texture. In 2021, 6 barrels went into the final blend, one of which was new French oak.
